Daikon radish kimchi handmade weekly in our kitchen from cubed daikon radish. Since daikon radish tends to be sweeter than napa cabbage, it has an overall sweeter taste compared to napa cabbage kimchi (the more traditional kimchi).
Stage of fermentation will vary.
Kimchi is made by lacto-fermentation, the same process that creates sauerkraut and traditional dill pickles. Depending on when the batch was made that week, our kimchi may be more or less sour (give us a call to the location closest to you for more info).
